Elotes are a must-have for any fiesta, whether you’re throwing a Cinco de Mayo party, hosting a backyard barbecue, or just looking for a fun way to jazz up taco night. They’re easy to make, a total crowd-pleaser, and let’s be honest, who doesn’t love food that’s messy, fun, and finger-licking good?

What Are Elotes?
Elotes (pronounced eh-LOH-tays) are a popular Mexican street food, where grilled or boiled corn on the cob is coated in a rich and creamy sauce, rolled in crumbled cheese, and dusted with spices.
Think of them as corn on the cob leveled up! Traditionally, they’re sold by street vendors and are enjoyed as a handheld snack. You’ll often see people walking around fairs or festivals happily munching away on one of these beauties.

Mexican Elotes Recipe
Prep time: 5-10 minutes
Cook time: 5 minutes
Servings: 4
Ingredients:

-
4 corns on the cob, husks removed
-
½ cup cotija cheese, crumbled
-
1/3 cup Mexican crema (or sour cream)
-
1/3 cup mayonnaise
-
1 lime, juiced
- 2 tbsp cilantro, chopped
- 1 tsp tajín seasoning
Instructions:
Bring a large pot of water to a boil. Carefully add the corn and let it cook for about 5 minutes, or until tender.

While the corn is cooking, mix together the Mexican crema, mayonnaise, and lime juice in a small bowl. This will be your creamy coating.
Finely chop the cilantro and set aside.
Once the corn is cooked, remove it from the pot and let it cool slightly so it’s easier to handle.
Using a brush or spoon, slather the creamy mixture all over the corn.

Sprinkle crumbled cotija cheese generously over the corn, making sure it sticks to the creamy coating.
Sprinkle tajín seasoning over the top for a zesty kick.
Garnish with freshly chopped cilantro and serve warm!

Tips for the Best Elotes
-
Grill for extra flavor. While boiling is quick and easy, grilling the corn adds a smoky, charred flavor that takes elotes to the next level. Just brush the corn with a little oil and grill over medium-high heat for about 2-3 minutes per side.
-
Use fresh corn. Fresh, in-season corn will have the best sweetness and juiciness.
-
Make it less messy. If you want an easier-to-eat version, cut the corn off the cob and mix everything in a bowl, this is called esquites (Mexican street corn salad).
-
Cotija cheese substitute. Can’t find cotija? Use feta or parmesan for a similar salty, crumbly texture.
-
No Mexican crema? Sour cream works just as well!

Fun Variations
Want to get creative? Try these delicious twists on classic elotes:
1. Spicy Chipotle Elotes
Add a spoonful of chipotle in adobo sauce to the crema mixture for a smoky, spicy kick.
2. Garlic Parmesan Elotes
Replace the tajín with garlic powder and swap out the cotija for parmesan cheese. Finish with a sprinkle of fresh parsley.
3. Avocado Crema Elotes
Blend avocado with the crema and mayonnaise for a creamy, slightly sweet twist.
4. Bacon & Jalapeño Elotes
Crumble crispy bacon and diced jalapeños over the top for a bold, savory variation.
5. Everything But the Elote Seasoning
Trader Joe’s sells a spice blend called “Everything But the Elote” that makes a great shortcut for seasoning your corn.
Perfect Pairings for Elotes
Elotes are delicious on their own, but they also pair wonderfully with:
-
Tacos (chicken, beef, or veggie!)
-
Grilled meats like carne asada or BBQ chicken
-
Mexican rice and beans
-
Fresh guacamole and chips
-
Margaritas or mocktails (for a full fiesta experience!)
