Vanilla Vegan Baked Donuts

Ingredients:

  • 1 cup all-purpose flour
  • ½ cup pure cane sugar (such as Florida Crystals)
  • ½ cup non-dairy milk (such as oat milk)
  • 2 tbsp unsweetened applesauce
  • 1 tbsp vegan butter (such as plant crock)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt

For the topping:

  • 1 cup confectioners’ sugar
  • 2.5 tbsp vegan butter
  • ½ tsp vanilla extract
  • ½ tsp food coloring (optional)

Instructions:

Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or vegan butter.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.

In a separate bowl, mix the non-dairy milk, applesauce, melted vegan butter, and vanilla extract.

Pour the wet ingredients

 

Spoon the batter into the prepared donut pan, filling each mold about 2/3 full.
Bake in the preheated oven for 8-10 minutes, or until a toothpick inserted into the donuts comes out clean.

Remove from the oven and let the donuts cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

For the topping, melt the vegan butter in microwave or in a small saucepan over low heat. Once melted, remove from heat and stir in the confectioners' sugar, vanilla extract, and food coloring (if using) until smooth. You can add a little bit of water or milk if your icing is not the right consistency.

Dip Donut
